Born out of passion for Modern Inspired Western Cuisine, The Rustic Bistro was the brainchild of Chef Eddy Wan and Chef Stephen Yong. Both chefs helmed more than 10 years of experience in culinary experience in various hotels and chain restaurants.
Prior to Chef Eddy’s food stall setup at China Square called The Eddy’s Kitchen, he was the sous chef of The Pierside (part of the Mamalad
e Group) at One Fullerton. His journey as a chef included past stints in Gunther’s, Mandarin Oriental, M.Y. Golden Odyssey (an 80 meter privately owned super yacht used exclusively by a senior member of the Saudi Arabia Royal Family).
It was at M.Y. Golden Odyssey that brought the two chefs together to work hand in hand. Chef Stephen Yong held various senior positions in his culinary career - he was the Executive Chef of established hotels (Golden landmark Singapore Mercure Hotel, Meridien Hotel Singapore) and Senior chef of Westin Stamford, Prego Italian restaurant. He also took part in a few cooking competitions like FHA International Salon Culinaire Food Hotel Asia which earned him gold medal awards.
